Vietnamese Spring Rolls:

  • 2 ounces rice vermicelli, boil briefly, or let stand in warm water

  • 21 large cooked shrimp, peeled, deveined, and cut in half

  • 14 leaves lettuce

  • 7 rice wrappers

  • 1 large carrot, peeled and cut into thin matchsticks

  • 1 cucumber, cut into matchsticks

  • ½ cup warm water for rolling spring rolls

  • PEANUT BUTTER SAUCE:
  • ½ cup creamy peanut butter

  • 1 tablespoons soy sauce

  • 1 tablespoon brown sugar

  • 2 tablespoons fresh lime juice

  • 1 teaspoon toasted sesame oil

Directions

  • Place the creamy peanut butter in a bowl, add soy sauce, brown sugar, fresh lime juice, and toasted sesame oil. Stir well.
  • Begin to make rolls. First, dip one packet in hot water for 1 second to soften it, place it on a cutting board or table surface. In the middle row, place 2 lettuce leaves, a handful of vermicelli, a few slices of carrots, and cucumber. Fold the uncovered side inward, place 2 parts cooked shrimp in place and then roll the wrapper tightly. Do this until the ingredients run out or adjust to the desired portion. Serve Vietnamese Spring Rolls with Peanut Butter Sauce.
