Pasta is usually made from unleavened dough, which is made from semolina flour mixed with water or eggs. The dough is then formed into sheets or various shapes which are then cooked by boiling or grilling.

Semolina itself is wheat flour produced from grinding durum wheat seeds mixed with eggs so that it is a little bright yellow, and when cooked properly it will produce a slightly chewy texture. The dry pasta is then boiled and cooked together with sauces and spices.

This pasta is cooked with various recipes and is usually synonymous with bolognese sauce, which is a sauce originating from Bologna, Italy made from tomato sauce, minced meat, and spices. The taste of this sauce is dominated by the sweet and sour taste of the tomatoes combined with the savory beef.

Ingredients

  • 1 pound spaghetti, cook according to package directions, and drain

  • ¼ cup olive oil

  • ½ Vidalia onion or yellow onion, minced

  • pinch of kosher salt

  • small handful basil, chopped

  • Spicy Homemade Tomato Cream:
  • 22 ounces halved cherry tomatoes

  • 2 minced garlic cloves

  • pinch of crushed red pepper

  • 2 tablespoon butter

  • ¼ cup pasta water

Directions

  • Heat 1/4 cup olive oil in a large skillet over medium heat. Add ½ Vidalia onion or yellow onion, add a pinch of kosher salt and cook for 3 minutes until the onions are wilted.
  • Add 22 ounces of halved cherry tomatoes, 2 minced garlic cloves, a pinch of crushed red pepper, and 2 tablespoon butter. Stir well and cook for 1 minute. Add ¼ cup water paste, stir and let it thicken.
  • Add the spaghetti pasta that has been cooked beforehand and the small handful of chopped basil. Stir until the sauce covers the noodles completely. Transfer to a serving plate.
