What is Mochi?

Mochi is a traditional Japanese food that has a round shape with a sweet and chewy taste which is currently in demand by many circles. This thick and chewy cake is more than 2,000 years old. Mochi was originally made by pounding glutinous rice and then drizzling it with a sweet peanut mixture.

In the early 1990s Frances Hashimoto, owner of Mikawaya, an LA restaurant, decided to fill mochi with chocolate ice cream. Until now, there have been many variations of mochi filling. Starting from green tea mochi, brown sugar mochi, mango mochi, strawberry mochi to ice cream mochi. You can easily taste the melted mochi ice cream at cafes or buy it at supermarkets.

But in a pandemic like now, of course, we are lazy to leave. Therefore, to fill your spare time at home, it’s a good idea to make Strawberry Mochi Ice Cream yourself.

For Strawberry Ice Cream, the ingredients you need are chopped strawberry, heavy whipping cream, sugar. You just have to mix all the ingredients earlier. If you don’t want to make it, you can just use strawberry ice cream to save time.

Get a small circular baking sheet and cover it with muffin paper. You can adjust the paper size to the size of the pan circle. Spoon the ice cream on top. Store in the refrigerator until the ice cream has hardened slightly.

Meanwhile, the ingredients for Strawberry Mochi include glutinous rice flour, sugar, water, and food coloring. Then mix all the ingredients and cook in a saucepan over low heat until thickened and the dough feels sticky when stirred.

Place a little cornstarch on a table or cutting board. Pour the thick mochi on top. Roll and cut of mochi with circle and clover cookie cutter. Take out one of the ice cream balls, and wrap it in mochi. Keep the seams face down, and put them back in the freezer. Let the mochi set for a few hours in the freezer.

Ingredients:

  • Strawberry Ice Cream Ingredients:
  • chopped strawberry

  • heavy whipping cream

  • sugar

  • Strawberry Mochi Ingredients:
  • 1½ cups of glutinous rice flour

  • ¼ cup sugar

  • 2/3 cups water

  • 2 drops of food coloring

Directions

  • Combine chopped strawberry, heavy whipping cream, and sugar. Stir until combined. Spoon the ice cream on a round baking sheet that was previously covered with muffin paper. Store in the refrigerator until the ice cream has hardened slightly.
  • While waiting for the ice cream to harden, we make the mochi. Mix 1½ cups of glutinous rice flour with ¼ cup sugar, 2/3 cups water, and 2 drops of food coloring. Cook in a saucepan over low heat until thickened and the mixture feels sticky when stirred.
  • Pour the hot mochi on a table or cutting board that has been previously treated with cornstarch. Roll and cut of mochi with circle and clover cookie cutter. Take out one of the ice cream balls, and wrap it in mochi. Keep the seams face down, and put them back in the freezer. Let the mochi set for a few hours in the freezer.

Notes

  • You can change the food coloring and the ice cream to a different flavor and color.
