Rigatoni is a pasta originating from Italy which has a tube-like shape with strokes of different lengths and diameters. This pasta is larger than penne and ziti pasta and sometimes has a slightly curved shape, although it doesn’t curl like angled macaroni.

The most prominent characteristic of Rigatoni is that they have a ridge along with them, sometimes also rotating around the tube, and unlike penne pasta, the ends of the rigatoni are usually cut in a square not diagonally like penne or perpendicular to the tube wall instead of diagonally.

The name Rigatoni itself refers to its jagged and lined surface. The word rigatoni, comes from Italy, namely rigato, namely rigatone (augmentative), and rigatoni (plural form) which means “jagged” or “lined up” and is associated with cuisines from the south and central of the country of origin of the pasta. The shape, which resembles a tube with strokes, is meant to make the sauce stick and fill the pasta when enjoyed. This pasta is not only used as a dish for stir-fry pasta as usual, but also for baking.

One of the Rigatoni recipes that are currently popular is Rigatoni with Spicy Vodka Sauce. Not only are the ingredients easy to get, how to make them is very easy, it only takes approximately 30 minutes.

Ingredients for Rigatoni with Spicy Vodka Sauce:

10 ounces of Rigatoni pasta
1 onion, diced
1 tablespoon butter
1 teaspoon garlic minced
1 teaspoon dried oregano
1 teaspoon red pepper flakes
salt and black pepper to taste
½ cup tomato paste
1 cup shot vodka
1 cup heavy cream
1 cup of pasta water

Before that, you need to cook Rigatoni pasta. Set aside 1 cup of pasta water.

Meanwhile, start sautéing the other ingredients, heat the butter, add onions, garlic, dried oregano, red chili flakes, salt, and black pepper to taste. Saute for 10 minutes or until fragrant. Then add the tomato paste, vodka, and heavy cream. Stir well. Add the rigatoni pasta that has been cooked beforehand, add the grated parmesan according to taste, mix well and pour the pasta water. Ingredients

  • 10 ounces Rigatoni pasta, cook according to package directions, set aside 1 cup of pasta water

  • 1 onion, diced

  • 1 tablespoon butter

  • 1 teaspoon garlic minced

  • 1 teaspoon dried oregano

  • 1 teaspoon red pepper flakes

  • salt and black pepper to taste

  • ½ cup tomato paste

  • 1 cup shot vodka

  • 1 cup heavy cream

  • 1 cup grated parmesan

Directions

  • Heat the butter in a skillet over medium heat. Add onions, garlic, dried oregano, red pepper flakes, salt, and black pepper to taste. Saute for 10 minutes or until fragrant. Add tomato paste, vodka, and heavy cream. Stir well. Enter the rigatoni pasta that has been cooked beforehand, add the grated parmesan, mix well and pour the pasta water. Simmer for 20 minutes or until the sauce thickens.
  • Transfer to a serving plate and sprinkle with parmesan and parsley or basil.
