How to Make Mini Oreo Cheesecakes?

You can start crushing the Oreos in a food processor, then add more melted butter and mix. Place it on a muffin tin that has previously been lined with parchment paper or nonstick paper, if you don’t have a muffin pan, use a small pan is fine too. Press until the surface is solid. Add 1 grain of Oreo cookies and add Oreo crumbs. Bake in the oven for 5 minutes.

While waiting for it to cook, you can make the cheese cake topping by smoothing the cream cheese with sugar, vanilla extract, eggs, and Oreo crumbs using an electric mixer. Grease each muffin tin with it and bake for another 15 minutes. For topping you can sprinkle it with whipped cream and 1 slice of Oreo biscuits. But before serving make sure you keep it in the refrigerator for 2 hours or overnight.

Ingredients

  • 8 oz softened cream cheese at room temperature

  • 2 eggs

  • 2 cups oreo crumbs

  • 1/3 cup granulated sugar

  • 4 tablespoon melted unsalted butter

  • 1 teaspoon vanilla extract

  • Whipped cream and oreo cookies for topping

Directions

  • Preheat oven to 350º F. Line a muffin tin with muffin liners or parchment paper.
  • Add in the oreo crumbs, stir in the melted butter until it resembles coarse sand. Take 1 to 2 tablespoons of Oreo crumbs and place them in each muffin cup. Press firmly, place 1 grain of Orea cookie and add more Oreo crumbs. Do it until all ingredients run out. Bake the crust for 5 minutes in the oven. Take it out and let it cool to room temperature.
  • Meanwhile, put the cream cheese in an electric mixer, beat for 3 minutes until soft. Add sugar and vanilla extract, beat again until smooth. Enter the eggs one by one, beat again. Turn off the mixer, put in the oreo crumbs or a few larger pieces of oreo, mix manually using a spatula. Place 2 tablespoons of cheesecake batter in each muffin cup. Top with Oreo crumbs sprinkled on top. Bake for another 15 minutes or until the center of the cheesecake only shakes slightly. Remove from oven, let cool to room temperature.
  • Sprinkle with whipped cream and place 1 slice of Oreo cookies on top. Store in the refrigerator for 2 hours or overnight.
