Ingredients

  • 2 cup quinoa, cook

  • ½ chopped cucumber

  • ½ chopped red bell pepper

  • ½ chopped orange bell pepper

  • 1/3 chopped red onions

  • ½ can of chickpeas

  • ½ can of veggies

  • ½ can of vegan feta

  • DRESSING:
  • juice of a ½ lemon

  • 1 tablespoon white wine vinegar

  • 2 tablespoon olive oil

  • dash of maple syrup

  • ¼ teaspoon cumin

  • ¼ teaspoon oregano

  • ¼ teaspoon garlic salt

  • ¼ teaspoon basil

  • 1 tablespoon dijon mustard

Directions

  • In a small bowl, mix all the ingredients for the salad dressing such as lemon juice, white wine vinegar, olive oil, maple syrup, cumin, oregano, garlic salt, basil, and dijon mustard. Stir well.
  • In a large bowl, add the chopped cucumber, red bell pepper, orange bell pepper, and red onions. Combine it with cooked quinoa, chickpeas, veggies, and vegan feta. Stir it up. Finally, pour the dressing over the salad. Enjoy !!
