Where Did Kung Pao Chicken Come From?

This dish, also known as Gong Bao, has a crunchy, soft texture, with a savory-sweet and spicy taste. The name of this dish is inspired by Ding Baozhen, a former Qing Dynasty official and governor of Sichuan province. From its title, Gongbao, the name of the dish that is now known as Kung Pao Chicken was created.

The traditional recipe from Sichuan itself consists of chopped chicken, vegetables such as dry red chili peppers, sweet soy sauce, and Sichuan pepper, and it’s signature fried cashews. Sometimes Shaoxing wine is also added to make it smell good. Because it comes from Sichuan province, it tastes quite spicy and hot because of the Sichuan peppers that go into it. There are currently several non-spicy versions available.
