Greek Garbanzo Bean Salad is a healthy dish made from a mixture of cucumbers, cherry tomatoes, shallots, black olives, feta cheese, and most importantly garbanzo beans.

Ingredients

  • 2 cucumbers, seeded and diced

  • 1-pint cherry tomatoes halved

  • 1 medium tomato, diced

  • ½ red onion, chopped coarsely

  • ½ cup crumbled feta cheese

  • 6 ounces (around 1 can) black olives, chopped coarsely

  • 15 ounce (around 2 cans) of garbanzo beans rinsed and drained

  • SALAD DRESSING:
  • ½ cup Italian-style salad dressing

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon olive oil

  • ½ teaspoon ground black pepper

  • ½ teaspoon garlic salt

Directions

  • Put all the salad ingredients such as cucumbers, cherry tomatoes, red onions, and black olives into a large bowl, add crumbled feta cheese and garbanzo beans.
  • Meanwhile, put ½ cup Italian-style salad dressing, 2 tablespoons of fresh lemon juice, 1 tablespoon olive oil, ½ teaspoon ground black pepper, and ½ teaspoon garlic salt into a glass or jar, then shake until the sauce is mixed. Pour into the salad, mix well. Serve and enjoy !!
