This pudding uses chia seeds as the main ingredient and substitutes for oats. Where later chia seeds are mixed with coconut milk, vanilla extract, honey, and additional grated coconut. Then given a tropical fruit topping, namely pomegranate, blueberry, and dragon fruit which increase the number of nutrients.

Ingredients

  • 1 can (13.5 oz) coconut milk lite

  • 1/3 cup organic black chia seeds

  • 1 tablespoon vanilla extract

  • 1 tablespoon honey or maple syrup

  • 1/3 cup flaked coconut

  • 1/3 cup pomegranate

  • 1/3 cup blueberry

  • 1/3 cup dragon fruit chopped

Directions

  • In a bowl, add coconut milk lite, organic black chia seeds, vanilla extract, and honey. Stir it up. Add flaked coconut. Stir again until combined. Cover the bowl and keep it in the refrigerator overnight.
  • For serving, spoon pomegranate, blueberry, and dragon fruit chopped on top. Enjoy it.
