Choco Chips Tahini Oatmeal Cookies are light but crunchy snacks made from oats mixed with cookie ingredients and the most important ingredient is Tahini. This cookie has a very low moisture content because it is made in the oven.

Ingredients

  • ¼ cup (65gr) Tahini

  • 4 tablespoons maple syrup

  • syrup or honey to taste

  • 1 ½ tablespoon coconut oil

  • ¼ cup (25gr) oats, blend until it becomes flour

  • 1 ½ tablespoon tapioca starch

  • cornflour or sweet rice flour

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • ¼ teaspoon nutmeg

  • ¾ teaspoon cinnamon

  • 1/3 cup (25gr) rolled oats

  • 1/3 cup (56gr) dark chocolate

Directions

  • Preheat oven to 180 ° F. Line a baking sheet with non-stick paper.
  • In a large bowl, combine ¼ cup Tahini, 4 tablespoons maple syrup, 1 ½ tablespoon coconut oil and add syrup or honey to taste. Stir until combined.
  • In a separate bowl, combine dry dough such as ¼ cup oats flour, 1 ½ tablespoon tapioca starch, cornflour or sweet rice flour, ½ teaspoon baking soda, ¼ teaspoon salt, ¼ teaspoon nutmeg, and ¾ teaspoon cinnamon. Stir until combined. Gradually beat the flour mixture into the tahini mixture. Stir until well blended. Add 1/3 cup dark chocolate and 1/3 cup rolled oats. Stir well.
  • Shape the cookies into circles, then place them on a baking sheet. Bake the cookies for 8 – 10 minutes in the preheated oven, or until they are golden brown.
  • Remove from oven and transfer from sheet to wire rack and let stand for a while.

You can also serve warm with milk or Pudding Brownies.
