The use of orange peel as the main ingredient for sauces is usually widely used in traditional Chinese medicine as well as ingredients for cooking. How To Make Chinese Crispy Fried Chicken with Orange Sauce?

There are several steps you can take, namely seasoning the chicken, making the dry dough, and making the orange sauce.

First, season the cut chicken with 1 teaspoon white pepper, 1 teaspoon salt, 1 tablespoon sesame oil, and 1 ½ tablespoon light soy. Set aside

Then we move on to making the dry dough, namely by mixing ½ cup flour with ½ cup cornstarch and seasoning with 1 teaspoon salt, ½ teaspoon white pepper, and ½ teaspoon baking powder. Stir well. Add the spiced chicken pieces to the flour mixture. Stir and mix the chicken until it is completely coated.

Heat the oil until it reaches a temperature of 325 degrees. Fry the chicken for a few minutes or until the chicken is golden brown. Remove, drain, and transfer the chicken on a plate pre-lined with paper towels to reduce the oil content.

Meanwhile, we make the orange sauce by mixing ½ cup light soy, ¼ cup orange juice, 2 tablespoons of sugar, 2 tablespoons of brown sugar, and 1 tablespoon of orange zest in a small bowl.

Heat a little oil, saute 4 cloves garlic and 1 chopped tablespoon ginger until you have to, add 2 teaspoon red pepper flakes. Add the oranges sauce, and cook for a few minutes, adding 2 tablespoon vinegar and 2 tablespoon cornstarch slurry and cook again until the sauce thickens. Put the chicken in the fried chicken into the sauce and stir until all the chicken is completely coated in the sauce.

Ingredients

  • Chicken:
  • 1 lb thigh chicken cut into 1″ cubes

  • 1 teaspoon white pepper

  • 1 teaspoon salt

  • 1 tablespoon sesame oil

  • 1 ½ tablespoon light soy

  • Orange Chicken Sauce:
  • ½ cup light soy

  • ¼ cup orange juice

  • 2 tablespoon sugar

  • 2 tablespoon brown sugar

  • 1 tablespoon orange zest

  • 4 cloves garlic, chopped

  • 1 tablespoon ginger, minced

  • 2 teaspoon red pepper flake

  • 2 tablespoon vinegar

  • 2 tablespoon cornstarch slurry

  • Dry Dough:
  • ½ cup flour

  • ½ cup cornstarch

  • 1 teaspoon salt

  • ½ teaspoon white pepper

  • ½ teaspoon baking powder

  • Ingredients Other:
  • Oil for frying

Directions

  • Season the chicken with white pepper, salt, sesame oil, and light soy. Set aside.
  • Add light soy, orange juice, sugar, orange zest, and brown sugar in a small bowl. Stir well. Set aside
  • Combine dry dough such as flour, cornstarch, salt, white pepper, and baking powder. Stir and put the chicken pieces into the dry mixture then knead the chicken until all parts are perfectly coated.
  • Heat the oil in a saucepan over medium-high heat. Make sure the temperature reaches 325 degrees. Cook several pieces of chicken at once for 3 minutes or until the chicken is golden brown. Remove, drain and transfer the chicken on a plate lined with paper towels.
  • Meanwhile, heat a little oil, add the chopped garlic and ginger, red pepper flake, and orange sauce. Stir it up. Heat for 5 minutes. Add the vinegar and cornstarch slurry and leave for another 5 minutes until the sauce thickens. Put the chicken into the fried chicken in the sauce and stir until all the chicken is completely coated in the sauce. Transfer to a serving plate and sprinkle with green onions and orange zest.
