All You Need to Know About Chicken Tikka Masala:

There are several different theories as to the origin of this dish. Where some associate it with cooks from South Asia, namely Bangladesh who live in Great Britain. They consider this dish itself made in the Indian subcontinent.

This dish itself shares some similarities with the Indian subcontinent’s typical Anak-Continent butter chicken, both in manufacturing method and appearance. The main difference is that the chicken tikka masala uses tomato sauce instead of non-sauces. Where the sauce used is a pureed sauce mixed with heavy cream, coconut cream, and a mixture of the masala seasoning itself.

One of the spices often used in Indian cooking is garam masala. Where Garam masala comes from the word Garam which means “spicy“, and masala which is “a mixture of various spices and spices”. All this spice mixture is usually roasted so that it smells good and the essential oil comes out, then crushed it into a fine powder.

Garam masala is generally made from cloves, cardamom or green cardamom, cinnamon, coriander, black pepper, cumin, nutmeg, mace or nutmeg, and anise. Sometimes chicken broth and pieces can be colored with ingredients such as turmeric, paprika, tomato puree, or artificial food coloring.

Mix all the marinade for chicken, namely 1 cup yogurt, 1 ½ tablespoon minced garlic, 2 teaspoon garam masala, 1 ground cumin teaspoon, 1 teaspoon turmeric powder, 1 teaspoon Kashmiri chili powder, 1 teaspoon salt, ¼ teaspoon ground ginger. Soak the chicken for 30 minutes. Parboil chicken in vegetable oil and set aside.

Meanwhile, heat 2 tablespoon butter, add the onion, 1 ½ tablespoon minced garlic, 1 tablespoon grated ginger. Saute until fragrant, add a mixture of 1 ½ tablespoon garam masala, 1 ½ tablespoon ground cumin, 1 teaspoon turmeric powder, 1 teaspoon ground coriander. Stir well. Add 1 can tomato puree, 1 teaspoon Kashmiri chili powder, 1 teaspoon salt, 1 ¼ cup heavy cream, and 1 teaspoon brown sugar. If it’s too thick, you can add water. Cook for 10 minutes or until the chicken is completely cooked.

Ingredients

  • Chicken Marinade:
  • 1.5 lb of chicken (breast or thigh) cut into small chunks or size of one bite

  • 1 cup yogurt

  • 1 ½ tablespoon minced garlic

  • 2 teaspoon garam masala

  • 1 teaspoon ground cumin

  • 1 teaspoon turmeric powder

  • 1 teaspoon Kashmiri chili powder (red chili powder, cayenne pepper)

  • 1 teaspoon salt

  • ¼ teaspoon ground ginger

  • 30ml of vegetable oil for cook

  • Chicken Sauce:
  • 2 tablespoon butter

  • 1 diced onion

  • 1 ½ tablespoon minced of garlic

  • 1 tablespoon grated ginger

  • 1 ½ tablespoon garam masala

  • 1 ½ tablespoon ground cumin

  • 1 teaspoon turmeric powder

  • 1 teaspoon ground coriander

  • 1 can (425 gr) tomato puree

  • 1 teaspoon Kashmiri chili powder (red chili powder, cayenne pepper)

  • 1 teaspoon salt

  • 1 ¼ cup heavy cream

  • 1 teaspoon brown sugar

  • water to thin out sauce to your taste

Directions

  • Mix all the marinade for the chicken. Marinade chicken for 30 minutes. Cook chicken halfway through with vegetable oil and set aside.
  • Meanwhile, cook onion, garlic, ginger in butter. Mix in seasoning. Add tomato puree, Kashmiri chili powder, salt, and simmer for few minutes. Add heavy cream, brown sugar, and chicken, and cook for 10 minutes or until the chicken fully cooked through. add water if too thick.
  • Serve on a serving plate and enjoy with rice or Parata.
